✅材料
英國鹹豬腿肉 半隻...
英國放養豬咸腩片 6-8塊
薯仔 5個
連枝車厘茄 10-15粒
急凍精選夏日莓子 20-30粒
紅莓香橙醬 5湯匙
黑松露橄欖油 2茶匙
迷迭香 Rosemary 2棵
法式芥末醬 2茶匙
鹽、黑胡椒 適量
✨做法:
1. 英國鹹豬腿肉去皮切成圓柱形,均勻地塗上芥末醬,灑上黑胡椒醃1小時
2. 薯仔切件,浸水30分鐘(此做法能除去薯仔澱粉質,口感會更爽脆)
3. Bruno 平底烤盤加入一茶匙黑松露橄欖油,調至中火預熱4分鐘
4. 烤盤放入醃好的豬腿肉,用中火煎熟(✨小Tips:可以利用Bruno烤盤的圍邊煎封豬柳側面,確保每一面都熟透)
5. 豬腿肉煎熟後盛起,放涼備用
6. 烤盤再加入1茶匙黑松露橄欖油,加入薯仔粒、鹽、黑胡椒,中火煎香每一邊至金黃色後,加入迷迭香繼續炒5分鐘,盛起備用
7. 將煙肉逐塊鋪上豬腿肉,用食用綿繩綁緊定型
8. Bruno平底烤盤調至中火,放入煙肉豬腿肉卷(煙肉收口向下),向下壓定型,剪開綿繩繼續以中火煎脆煙肉
9. 將豬腿肉卷切件,Bruno平底烤盤放入紅皮薯仔粒、車厘茄、急凍雜莓、紅莓香橙醬,中火煮5分鐘,再加入迷迭香作裝飾即成
10.上桌時Bruno 可調至保溫,保持食物溫度

0.5 British Unsmoked Gammon
6-8 slices Dry Cured Unsmoked Streaky Bacon
5 Potatoes
10-15 pcs Vine Ripened Piccolini Cherry Tomatoes
1 British Summer Fruit Selection
5 tbsp The Collection Cranberry & Orange Sauce
2 tsp The Collection Truffle Olive Oil
2 Rosemary
2 tsp Dijon Mustard
Salt and Black Pepper
✨METHOD
1. Remove the skin from gammon. Season it generously with salt and pepper. Brush it on all sides with mustard.
2. Cut the potatoes in half or quarters.
3. Heat the olive oil in the pan.
4. Sear the gammon in the pan on all sides until well browned
5. Remove the gammon from the pan and let cool.
6. Heat the olive oil in the pan again. Fry the potatoes and season with salt and pepper. Cook until golden.
7. Lay the slices of bacon next to each other, with the long sides slightly overlapping. Lay the gammon across the bacon, then roll it up so the gammon is completely enclosed, with the ends of the bacon underneath.
8. Cook the roll for few minutes so the bacon becomes golden on each side.
9. Remove from the pan and let rest for few minutes before slicing. Meanwhile, Return the potatoes to the pan, together with tomatoes, berries and sauce. Cook for 5 minutes.
10. Serve, topped with the rosemary for decoration.
