You can buy them still in their pods - they must be left to soak for at least 12 hours before cooking - or already pre-cooked. Traditionally, #gremolata is a dressing made of grated lemon, garlic and parsley. In this dish, we will substitute parsley with fresh thyme and add grated Fontina, an Italian cheese with an intense flavour and made from cow's milk, which has been produced in the Aosta Valley (Alps) since the 12th century.
